Inspired by the great lambic beers of Belgium, this batch of Methode Ravens was bottled with an extremely low level of carbonation that will increase gradually if cellared for several years.
An annual blend that celebrates the evolution of 3 Ravens' mixed culture and champion the subtle and nuanced flavours created by yeast and bacteria in oak barrels over an extended period, the base beer was brewed in 2018 with German ale malt, rolled oats & rolled rye, aged Tettnang hops, and fruity English yeast.
Aged with house culture in old wine barrels, expect a mild oak note with developed subtle hints of apple, pear and grape alongside soft acidity. A quarter cask of an unboiled wheat beer contributed a high level of lactic & acetic acid while the second fill of a small solera project was blended in for horsey, leathery & sherbet-like wild yeast aromatics.
